Easy and Tasty Bread Pudding

Anyone who knows me will tell you, I do love dessert. However, I am not a cake and ice cream kind of girl. In fact, I don’t really even like chocolate all that much. SHOCKING, I know. I have an affinity for, um, fancier desserts? I don’t know what you would call it, I like things like creme brulé, fruit tarts and, of course, bread pudding.

Every time I go to a restaurant and see freshly made bread pudding on the menu I automatically choose my meal to ensure that I have enough room for it for dessert. Bubba Gump Shrimp has one of my favorites. It always seemed like something I had to get “special” for some reason. I remember when I was a bit younger seeing the recipe for bread pudding on the side of a Rice Dream box and thinking “hey, what the heck, let’s try it.” Now I had a recipe for easy and tasty bread pudding I could make at home.

Recently, I got two giant loaves of french bread for free from the grocery store. I played that instant win Monopoly game and got the coupons from that. I play that silly game every year and never win more than free bread. Alas, I keep trying. Anyway. I had two loaves and only two people to eat. Fresh french bread lasts about 30 seconds so I knew it was going to be stale before we could eat it. Then I thought “Ooo, stale bread, I could make some bread pudding!”

To my dismay, the Rice Dream box no longer has the recipe I used to make it in the past but I bought a box and figured I would do my best. Upon looking at several Pinterest pins I found the commonalities and then went with what I would remember from the box. I love the recipe because it requires only a few ingredients and it doesn’t have dairy milk, which though I do cook with I like to make things with alternatives when I can.

Without further a due, here is how to make easy and tasty rice pudding.

You don’t need too much. Some stale bread. I used french bread, a 32-ounce box of Rice Dream, or whatever milk you prefer. I have tried it with soy once and didn’t like the texture but feel free to try different kinds of milk if you have something else on hand. You will need sugar, I used unbleached sugar, in case my sugar looked off to you in the photo. I just don’t see the need to make my sugar whiter and bleach in my food seems odd. Use whatever sugar you typically use. You will also need 5 eggs, cinnamon, and nutmeg. Oh, and vanilla is good to add. I didn’t this time because you can see my Rice Dream was vanilla already.

How To Make It

First, you will take some stale or going stale bread and cut it up in the chunks. Then place the chunks in a 9 x 13 baking dish that has been sprayed with nonstick.

Next, combine all the other ingredients in a big mixing bowl. I skipped the vanilla this time since I had vanilla Rice Dream but if you have regular flavor than you can add that in too.

Once mixed, pour it over the bread and let it soak in for 15 min or so. Just before putting it in the over, I like to sprinkle a little sugar over the top for a nice crunch. You don’t have to do this of course, but I like to.

All that is left to do is bake it at 350 for 30 to 45 minutes!

Easy and Tasty Bread Pudding

  • 1 loaf Stale French Bread ((or whatever bread you have))
  • 5 Eggs
  • 3/4 cup Sugar
  • 4 cups Rice Milk ((You can use dairy milk))
  • 1 tsp Vanillla Extract
  • 1 tsp Gournd Cinnamon
  • 1 tsp Nutmeg
  1. Spray a 9×13 baking dish with nonstick cooking spray. Place the cubed challah bread into the prepared baking dish and spread it around into an even layer. Set aside.

  2. In a very large mixing bowl, whisk together the eggs, sugar, milk, vanilla, nutmeg, and cinnamon until fully combined. Pour the mixture evenly over the bread in the prepared baking pan, making sure all of the bread is coated. Allow to sit and soak up the mixture for about 15 minutes.

  3. Meanwhile, preheat oven to 350°F. Once the 15 minutes is over, place the bread pudding in the oven and bake at 350°F for 45-50 minutes or until the top is set.

  4. Remove from the oven and allow it to cool slightly before serving.
