Easy Instant Pot Rice Pudding

It should be noted that I LOVE rice. I could probably eat it every day and every way and never tire of it. When I was younger my grandma would make me breakfast sometimes of just plain rice with a little milk and sugar. It was so yummy, I still eat that for breakfast with leftover rice. I also, of course, loved rice pudding. I have had the store-bought stuff it’s fine, and very few restaurants have it. After some fine-tuning and some modifications, I landed on my version of a very easy Instant Pot Rice Pudding. 

A few years ago my roommate at the time and I had a craving for some good rice pudding, I took to Pinterest, of course, and found one that had all of the ingredients we had and we made it. It was so good!! In fact, we liked it so much we made it several more times in the coming weeks and doubled the batch when we did. 

The only thing was that it took a while, waiting for the rice to boil, then waiting for the pudding to cook, watching over it so it wouldn’t burn or get weird I mean I was worth it, but I wanted an easier way. 

A couple of years ago I bought my first Instant Pot. Trying to think of ideas for things to make in it I decided that I would give rice pudding a go. It promised to make cooking easier and that is exactly what I wanted to happen with the recipe! I looked up a couple of recipes online for Instant Pot Rice Pudding to see what others were doing. I was still so new to the whole IP craze I needed a little guidance. Then though some trial and error I took what I was seeing around the interwebs and melded it with my tried and true recipe. After just a couple attempts, I got it perfected and I was so happy to not have to be a slave to my stove to get delicious rice pudding anymore!

How to make easy Instant Pot Rice Pudding in the Instant Pot:

First, put your rice in the IP liner. (I use my little 3qt usually but it’s fine to make in the 6qt, I might double the recipe if using an 8qt.)

Rinse the rice a few times to get a little of the starch out, this will make it less sticky. I use this fun little pot strainer, but you can use a fine strainer to rinse it too. 

Once rinsed place the liner back in the pot and add 1 1/2 cup of the milk, water, and sugar. I use coconut milk in mine since I don’t drink a lot of regular milk. You can use regular if you wish, it’s quite yummy with the coconut milk though. If you use regular milk then you may need to adjust the sugar. I use less sugar since the coconut milk is a little sweet already. 

Place the lid on the pot, make sure its set to “sealing” and use the rice button. If your Instant pot doesn’t have a button for rice you can use the manual/pressure cook option for 4 minutes. Let it natural release. 

Once it releases remove the lid, stir in the remaining milk and the egg. I beat the egg in the remaining milk, I feel like it stirs in easier but you don’t have to, just be sure to stir consistently until you don’t see clear egg white, the heat of the pudding cooks the egg, you don’t want egg chunks in your pudding. Once that is all incorporated and thick, stir in the tablespoon of butter and the vanilla. I also add cinnamon here. You could mix in nuts, raisins or any other mix in your like at this point also.

Spoon it up and enjoy!!

Rice Pudding- Stove Top

  • 3/4 Cup Uncooked White Rice
  • 2 Cups Milk (Coconut or Dairy, Divided)
  • 1/4 Cup Sugar
  • 1/4 Tsp Salt
  • 1 Egg (Beaten)
  • 1 Tbsp Butter
  • 1/2 Tsp Vanilla
  1. Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes

  2. In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes.

  3. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly.

  4. Remove from heat and stir in butter and vanilla.

  5. Enjoy!
